Holiday Wreath Pavlova

holiday wreath pavlova

This is the perfect dessert for the Holidays. It’s colorful & festive, can be baked ahead of time & is ideal for so many dietary requirements – it’s a wreath pavlova!

You’ll need:
– Your favorite meringue recipe (you’ll need at least 4 egg whites to serve around 6 people).
– Baking sheet lined with parchment
– Whipping Cream or Coconut Cream
– Fresh fruit (we love berries & fresh mint)

Draw a circle by tracing around a large bowl on your parchment paper. Place a second smaller bowl in the center of your parchment & trace around it. This will be your guide of where to place your meringue.

Once you’ve prepared your meringue, place it on the baking sheet within your circle guide in the shape of a wreath. Use a spoon to create a small well in the center, around your wreath. This will be filled with cream once baked.

Bake your meringue. Once baked, leave it in the oven with the oven turned off until it has cooled completely. This will keep the meringue crisp.

You can prepare the meringue ahead of time & keep it in an air-tight container until needed.

Just before serving, whip your whipping cream. We love using whipped coconut cream, it’s easy to prepare & is dairy free.

To make whipped coconut cream, place your cans of coconut cream in the fridge overnight. This will solidify the cream. Scoop only the cream out of the can, leaving behind any residual liquid. Beat on medium-high for 3-5 mins. until whipped. We like to add a little powdered sugar to sweeten & vanilla extract. You can also add a bit of the remaining liquid to make the cream a little looser.

Place your whipped cream over your wreath.

Then top with chopped fruit.

We use chopped berries together with fresh mint for the perfect Holiday colors.

Serve immediately.

Happy Holidays!
